Arugula and Goat Cheese on Pasta2 cups arugula
5 oz. goat cheese
1 tomato, chopped
1/4 cup olive oil
2 tsp. minced garlic
8 oz. pasta
salt and pepper to taste
Cook pasta al dente. Saute tomato in garlic and olive oil for 3-4 minutes. Drain pasta, and mix with arugula, tomato mixture, goat cheese and salt/pepper.
